A specialty originating in China and spreading to Japan millennia ago and now starting to be made in other parts of the world, green tea is made from leaves that have been prevented from oxidizing by a firing process of some kind. Retaining it's green color both in the leaf and the cup, green tea's flavor and other characteristics reflect the multitude of cultivars and varieties of tea bushes used to produce it.
